Banana bread is one of the yummy breakfast breads served during retreat season. This bread is most delicious made with very ripe bananas. Happily, the warm summer months assist us with this. It is a pleasure to catch the baking bread aroma as it wafts through the open windows, a beautiful, simple pleasure available to us as we practice being here, in this moment, in compassion.  The best recipe yet for a happy life!

Banana Bread

1 ¾ cups spelt flour
2 ¼ tsp baking powder
½ tsp salt

⅓ cup applesauce
¼ cup brown sugar
2 beaten eggs, or egg replacer equal to 2 eggs
1 ¼ cups mashed ripe banana
½ cups broken walnuts

Mix and bake at 350º for 50 minutes in an 8 ½ inch x 4 ½ inch loaf pan.
