Kitchen Corner

The monks came together for lunch this afternoon. We took what was offered on the roll-out table in the dining room and most of us headed outside. It’s June and we’ve had some unseasonably cold weather. Everyone enjoyed a warm place in the sun.

Our meal was polenta and some mixed fresh vegetables. It sounds pretty tame until you get to the Sunflower Seed Paté and the Divine Spark of the Cosmos dish. Monastic life is never boring! We’ve served this paté in the past with zucchini noodles, spaghetti squash, and as a dip with crackers and raw veggies. It is flexible, very simple, tasty, and protein-rich.

Sunflower Seed Paté and the Divine Spark of the Cosmos

Serves 6

Ingredients

¾ cup raw sunflower seeds

1 lemon

½ tsp. lemon zest

1 bunch (60 g.) fresh basil

1 small garlic clove

Instructions

  1. Soak sunflower seeds overnight, or for at least seven hours, then drain and rinse.
  2. Juice the lemon and add to soaked seeds.
  3. Finely grate up to ½ tsp. lemon zest (to your preferred zingy-ness).
  4. Add salt.
  5. Crush garlic.
  6. Roughly chop basil leaves.
  7. Blend all the ingredients in a food processor until everything is blended together beautifully.
  8. Enjoy!
