Recently the monks enjoyed an evening meal of a simple cold spread of avocado and tofu. It was very welcome on a hot August day. We steam the tofu for 30 minutes and then cool it prior to making the spread. This makes the tofu easier to digest. If you have some avocados and tofu this can be put together rather quickly. If you are participating in the Yearlong Retreat it is yet another practice opportunity to prepare a delightful dish with the attention on Being rather than doing. A beautiful meal prepared in gassho.

Tofu-Avocado Spread
Serves 8 (I/2 cup servings)
1 pound tofu, drained and mashed
2 Tbsp. lemon juice
1 tsp. salt
ΒΌ tsp. ground cumin
4 avocados, mashed
Combine all ingredients and chill.
