What makes cooking so much fun is that it is a creative art as well as a science. This gives the cook the opportunity to be in the process of being inspired by Life and bringing that forth in food. Some of our favorite recipes did not come from a cookbook but from inspiration. For many years we have enjoyed Cheri’s Pizza. Lately, inspiration came through Ashwini and we all agree that it is a most yummy and happy dish!

Ashwini’s Breakfast Wrap

1 1/2 lbs. baby spinach

2 large cans of garbanzos

3 medium tomatoes

1 1/2 tsp. salt

6 oz of feta cheese

4 avocados

½ cup of chopped roasted peanuts

1 Tbsp. of ghee

16 whole wheat tortillas – type used for burritos

 

Heat the ghee in a large skillet over medium high heat.

Drain and rinse the garbanzos, add to the skillet and sauté until they begin to turn golden in color.

While beans are sautéing, chop the tomato and slice the avocado.

Add the tomato and salt to the beans after they have turned golden and cook until tomatoes are warm and runny.

Add spinach to the pan and cook just until wilted. Add feta and stir.

Serve hot with warm tortillas and sliced avocado and chopped peanuts on the side.
