By the time you read this we will have completed a very full Transcending Fear retreat and most likely be on our way to our first There Is Nothing Wrong With You retreat of 2018. Both retreats have had maximum registrations, bringing many folks to nourish and love during their Monastery stay. We’ve added a new dish to our retreat menu. It is fairly simple to prepare and comes to the table looking very impressive as well as yummy.

Warm Chickpea Salad

    2 red onions, cut into wedges

    4 zucchini sliced ½ inch thick

    2 red pepper, seeded and cut into large chunks

    1 1/2 lbs. ripe tomatoes, cut into wedges

    5 Tbs. olive oil

    Juice of 1 lemon

    6 Tbs. parsley, chopped

    4 15-oz cans chickpeas, drained

    2 6-oz containers of feta cheese, crumbled

Preheat the oven to 425 degrees. Put the onion, zucchini, peppers, and tomatoes in a shallow roasting pan and season with black pepper. Drizzle with 2 tablespoons of the olive oil and toss well. Roast for 30 minutes, stirring halfway through, until the vegetables are cooked and beginning to turn brown.

Meanwhile, mix the lemon juice and the remaining 3 tablespoons of olive oil to make a dressing. Season with salt and pepper to taste and stir in the parsley.

When the vegetables are cooked, allow them to cool for 5 minutes, then tip into a bowl with the chickpeas, feta and dressing. Toss lightly before serving. Serve over bulgur or a grain of choice. Leftovers are delicious cold and served with pita bread.
