Awareness practice gives us the opportunity to question beliefs such as “I am not a person who….” Instead we get to have our own experience. If you are a person who hears a voice questioning eating sauerkraut for breakfast, you may just want to have your own experience with this new breakfast favorite at the Monastery.

Tempeh Breakfast Sandwich

Serves  8

 

Four 8-oz. packages of your favorite tempeh

4 avocados, sliced

4 cups of sauerkraut

Rinse the tempeh and cut into sandwich size pieces. Marinate pieces overnight in your favorite marinade.

The following morning heat the oven to 250 degrees. Layer the tempeh and marinade in a single layer in a baking dish. Cover with foil and bake for 15 to 20 minutes. Remove the foil, flip the tempeh, and bake for another 15 to 20 minutes until the marinade is mostly absorbed. 

While the tempeh is cooking, slice the avocados and warm the sauerkraut.

To serve: toast the bread, layer the avocado, add some sauerkraut, and finish it off with tempeh slices.

If you do not have a favorite marinade this is the one we use at the Monastery:

1 cup balsamic vinegar

8 small cloves of garlic

1/2 cup water

1/3 cup soy sauce

1/4 cup olive oil

Mix well and pour over the tempeh. This marinade is enough for 4 packages of tempeh.
