Kitchen Corner

As you may have heard, we had an extraordinarily wet winter.  In addition to the lovely new creeks on the property, the garden is offering a robust lettuce crop to enjoy.  Over four pounds were harvested just today!  I don't know the names of the varieties, but I call them Speckled Beauty, Slender Leaves, Curly Delight, and Butter Leaf (okay, I know that one).  If you attend a retreat this spring, you're likely to be a very happy recipient of this generous yield.

Here is a scrumptious salad no matter what kind of lettuce you use!

Spring Salad for 4

Lettuce (any variety), 8 oz.

Fennel, 1 small, cut in small strips

Black olives, ½ can, chopped

Corn, 1 cup

Artichoke hearts, ½ can, chopped

Pumpkin seeds, 1/3 cup, toasted
