When planning menus at the Monastery, the weather is an important consideration.  During the hot summer months, sitting down at the end of the day to a cool salad or cold soup is such a pleasure.  Makes a person feel down-right loved! 

There are lots of Waldorf salad recipes out there.  We like this one because it uses fat-free, plain yogurt and has no added sugar.  We let the fruits’ natural sugar speak for itself.  One hint: really mince the celery, rather than simply chopping it.  This may be a personal preference, but having it in tiny pieces seems to better balance out the flavor in each bite.

Waldorf Salad

3 medium-size tart apples, in chunks

3 Tbsp lemon juice

1 stalk celery, minced

2 cups seedless grapes, halved

1 cup diced mozzarella

¼ cup packed minced dates

¾ cup toasted walnuts, chopped coarsely

 

Dressing:

1¼  cup  fat-free, plain yogurt

½ cup orange juice

½ tsp grated orange rind

Combine salad ingredients.  Whisk together dressing ingredients.  Combine everything and mix well.

Serves 4.
