One of my favorite things about this practice is that it is not about deprivation.  We are encouraged to be fully present for all of the gifts in Life -- not the least of which is delicious food!  Through many years of paying attention to how I eat, there is no doubt that having wholesome, organic food (and plenty of it!) brings deeper pleasure to this human being than the sugary, food-like items so popular with egocentric karmic conditioning. 

Here is a favorite summertime dish that delivers taste, nutrition, and delight.

Ndola Pasta Salad

1 lb rotini pasta
1 Tbsp salt
8 Morningstar 'sausage' links
2 cups broccoli crowns (about ½ lb)
3 medium sized tomatoes
8 oz. feta cheese
3 ripe avocados
¼ cup olive oil
¼ cup red wine vinegar

Cook pasta in boiling water with 1 Tbps salt until just tender. Drain and rinse under cold water. Set aside.
Cook the sausage links and crumble into 1/2” pieces.
Cut broccoli into small ¾” flowerettes and very lightly steam.
Dice the tomatoes
Crumble the feta
Dice the avocado
Combine all ingredients gently and chill.

Serves 7-8
